Chocolate Almond Tart Carrot Halwa

Ingredients

For the crust

• 1½ cups (144g) almond flour

• ¼ cup (21g) unsweetened cocoa powder

• ¼ cup (50g) coconut oil, melted

• 1 tablespoon (20g) pure maple syrup

• Pinch of kosher salt

For the filling

• ½ cup (114g) canned condensed milk

• 1 ½ cup full fat milk

• 500 grams Fresh Carrot grated

• 1 ½ cup Ghee (can use unsweetened butter)

• 1/2 tsp. cardamom powder

• ¼ cup (80g) pistachios nuts coarsely chopped or powdered

• 8-10 Raisins roughly chopped

• 8-10 Cashew nuts roughly chopped

• Dark Chocolate/white Chocolate shavings

• Rose petals (optional) fresh or dried for decoration.

Directions

Combine the tart fillings into the tart cases and chill

Grate carrots and keep aside

Take a big broad sauce pan, Add the milk and infuse it with cardamom powder and heat it gently. After a few minutes add the carrots cook them slowly till the milk gets absorbed.

This might take a couple of minutes to cook depending upon the quantity of carrots you choose.

Once the milk is absorbed slowly add the ghee into it and gently roast the cooked carrots till it gets a bit sticky and looks fried but not, add the condensed milk and the cook it further till it all combines and leaves the sides of the pan.

Chill them and then add it to the tart shells decorate it with almonds and nuts and rose petals. Serve it chilled or with Ice-cream !
