Place the flour, Ghee,water,salt in a bowl and knead together to make a dough Rest it for some time and cover it with a cling film -refrigerate till you prepare the filling Ensure the dough is not to soft but firm enough

Meanwhile cut the dough into 4-6 pieces with a knife or use hands Roll it into a round size using a rolling pin and cut them into half Taking one part of the half circle dough shape it into a cone Fill it with potato filling Seal the ends with water and gather the edges to enclose the filling
Heat oil in a pan or deep fat fryer 145 C to 180 C To test the heat of the oil, put a piece of flour, it should sink but slowly come up. This is to ensure that the pastry doesn't get burnt. Fry it for approx 6-7 min depending upon the size your are making. Drain it on a paper towel and serve it with Mint chutney or Chutney of your choice.
