1/2 tsp Chilli powder

2 count Fresh Green Chillies

2 tbsp Fresh Coriander leaves roughly chopped

1 tsp Ginger -paste/shredded

50 g Frozen Peas/Fresh

4 count Potatoes -Medium size cooked and skin off

1 tsp Garam Masala

200 g Plain flour and some extra for dusting

1 tsp Salt

1 cup Veg Oil

1 tsp Ghee-Clarified Butter

1 tsp Cumin seeds

2-3 cups Water to splash and knead approx

1 cup Onions-Chopped fine

Place the flour, Ghee, water, salt in a bowl and knead together to make a dough Rest it for some time and cover it with a cling film -refrigerate till you prepare the filling Ensure the dough is not to soft but firm enough

Pastry or Dough

Mash the Potatoes, add all the ingredients and combine them together making sure to alter the salt and chilli elements in the filling(avoid chilli if u don't prefer hot)

Meanwhile cut the dough into 4-6 pieces with a knife or use hands Roll it into a round size using a rolling pin and cut them into half Taking one part of the half circle dough shape it into a cone Fill it with potato filling Seal the ends with water and gather the edges to enclose the filling

Heat oil in a pan or deep fat fryer 145 C to 180 C To test the heat of the oil, put a piece of flour, it should sink but slowly come up. This is to ensure that the pastry doesn't get burnt. Fry it for approx 6-7 min depending upon the size your are making. Drain it on a paper towel and serve it with Mint chutney or Chutney of your choice.
