Step into a world of spice, aroma, and colour with our Flavours of the East Autumn cooking sessions — a vibrant culinary journey through India’s coastal and eastern regions. In this 3-hour, hands-on class, you’ll explore dishes inspired by Bengal, Goa, and the South — where coconut, curry leaves, and mustard seeds come together in harmony.
Expect a three-course experience , crafted with easy-to-follow recipes that balance authenticity with approachability. You’ll cook with fresh seasonal ingredients, learn the art of spice layering, and uncover regional cooking secrets rarely found in restaurants.
Each class ends with a shared tasting — a warm, flavourful meal you’ve prepared from scratch.
After your cooking experience, you’ll have the opportunity to enjoy a drink with your fellow cooks as you discuss the new recipes you’ve tried. By the end of your class, you’ll have some great new Indian dishes to add to your repertoire, as well as a range of new cooking skills to use independently for future feasts!
🌾 Flavours of the East – Sample Autumn Menu
Starter (South India):
🥥 Crispy Corn & Curry Leaf Fritters
Golden, crunchy fritters infused with curry leaves, green chilli, and ginger — a playful street-style snack from Tamil Nadu served with tangy tamarind dip.
Main Course (Goa):
🐟 Goan Coconut & Lime Fish Curry
A coastal favourite with tender fish simmered in a light coconut sauce flavoured with lime, coriander, and mild spices — bright, aromatic, and perfect for autumn.
Accompaniment (Bengal):
🍆 Smoked Aubergine Bharta (Bengali-style mash)
Charred aubergine mashed with mustard oil, onions, and fresh herbs — a comforting side with bold smoky notes and a burst of regional flavour.
