We focus on delicate proteins—prawns and fresh fish—and learn how to treat them with respect so they remain tender and bursting with flavor. If you love seafood and want to master the art of the ‘Tarka’ (tempering), this is the journey for you.”

  • The Art of the ‘Tarka’: Learn how to sizzle mustard seeds and fresh curry leaves to create an aromatic “pop” of flavor that defines Southern dishes.

  • The Coconut Base: Master the technique of using fresh and milk-based coconut to create light, fragrant gravies that don’t overpower the seafood.
